Large octavo, original boards, gilt titles to the spine, illustrated with 161 woodcuts from drawings by E. Ronjat. Translated from the French and adapted for English use by Alphonse Gouffé. In very good condition.
French chef and pâtissier Jules Gouffé had an immense impact on the evolution of French gastronomy due to the extensive content he collected to complete his masterpiece, Le Livre de Cuisine. The majority of his works were translated into English by his brother, Alphonse Gouffé, Head Pastry Cook to Queen Victoria.
